I really enjoyed your video and plan on trying this if I get a Javelina.
Where abouts do you live? I’m in the Permian Basin in Texas. The thing is
that I know first hand how bad they smell bc of their gland and why they
are called the “skunk pig”. I’ve always been told they tasted gross. Have
you had them cooked any other methods and do you only recommend eating the
hindquarters? Thanks a lot!
Bigwhey, Thanks for the kind comment . I live in Idaho Falls, Idaho, far
from any javelina. I didn’t find the javelina to be that oderous at all. I
think if they’re run and excited, they will have an odor and taste that is
perhaps more gamey than one harvested calmly. I am eating the entire
javelina. Most I did grind with pork as they are very lean and hardly have
any fat at all. I made sausauge out of it and that turned out to be
absolutely delicious. I reccomend mixing with pork always.
